Sweet potatoes are a common staple to any clean eater. I am not that excited about sweet potatoes, but wanted to include them in my diet and wanted them to tasty.
The BASIC recipe:
Use small potatoes about (8 oz each) & always cut them similar in size so that they cook evenly.
🥔 2 pounds small sweet potatoes, unpeeled, cut lengthwise into 1-1/2 inch wedges.
🥔 2tbsp Olive Oil
🥔 1/2 tsp salt
🥔1/2 tsp pepper
Step 1) Adjust oven rack to middle position and heat oven to 450 degrees. Line rimmed baking sheet with parchment paper. Toss ingredients together.
Step 2) Arrange potatoes, skin side down in a single layer on prepared sheet. Roast until lightly browned and tender (about 30 minutes).
