Roasted Salmon With Ginger Sauce

  • 2 green onions
  • 10 oz. green beans
  • 2 garlic cloves
  • 2 salmon fillets
  • 1 tbsp chopped ginger
  • 1/2 fl. oz toasted sesame oil
  • 1 fl oz. teriyaki glaze
  • olive oil
  • salt & pepper
  • cooking spray
  • baking sheet
  • 2 small bowls
  • medium pan

Salmon Instructions: Trim and cut green onions into 2 inch pieces. Slice pieces into very thin strips and place in a small bowl of cold water and let them sit in the cold water until they curl. Mince the white part of the green onions. Trim off the ends of the green beans and mince the garlic. Rinse the salmon fillets and pat them very dry, then season both sides with salt and pepper.

Sear the Salmon into a sprayed medium pan over medium high heat. Add 2 tsp of olive oil and salmon to hot pan and cook on one side until browned (3 - 4 minutes), then flip and cook on other side.

Green Beans Instructions: In the same pan used to sear salmon, to high heat add 2 tsp olive oil and the green beans, a pinch of salt and pepper to taste and stir frequently until beans are bright green to slightly charred (takes about 3 - 5 minutes). Add half the ginger and half the garlic to pan and cook until aromatic and beans are crisp tender (1 - 2 minutes). Remove from burner.

Sauce: Combine remaining ginger, half remaining sesame oil, teriyaki glaze, minced green onions, and 2 tbsp water in a small bowl. Taste and add more garlic if desired.

Arrange green beans and salmon on a plate and pour sauce over both.
